Commercial dishwashers in Kingston: the machines and the faults
A commercial dishwasher is not a bigger version of the appliance in a house kitchen. It runs cycles of one to three minutes, dozens or hundreds of times a day, at temperatures a domestic machine never reaches. Low-temp machines sanitize chemically instead. When the sanitizer pump fails, the squeeze tube inside it splits, or the pickup line clogs, the machine washes normally but sanitizes nothing. Watching the chemical lines during a cycle — you should see product moving — tells you a lot.
Wash temperature has its own element and thermostat in the tank. A tank that never gets past lukewarm means greasy racks and detergent that cannot do its job, and it is one of the most common commercial dishwasher faults in Kingston kitchens.
Not draining, not filling, or leaking on the floor
Standing water in the tank after the cycle usually means a failed drain pump or, on gravity-drain machines, a drain solenoid or drain ball stuck closed. On older machines a failing vacuum breaker will drip steadily above the chamber long before it fails outright.

The best guide to the other direction is the chamber itself. A tank rotted through at the welds, a frame gone soft with corrosion, or a chamber that leaks from the metal rather than the gaskets is structural, and money spent on components in a failing shell is wasted. A machine that has been dependable for years and has simply stopped heating or draining is almost always worth fixing; one rusting from the inside out is not.
